Harvest Season: Why All Grapes Aren’t Picked at the Same Time

When people hear “harvest season” at a vineyard, it’s easy to picture one big weekend when all the grapes are picked and brought into the winery. In reality, harvest is a season—one that can stretch across several weeks as each grape varietal reaches ripeness on its own schedule.
Every grape is different. Just like peaches, apples, or tomatoes don’t all ripen at exactly the same time, grape varietals have their own natural timelines. Some are early-ripening varieties, while others need considerably more time on the vine to develop the flavors, color, tannins, and other characteristics a winemaker is looking for.
That means a vineyard can have one block of grapes ready to pick while another may still need several more weeks.
What Determines When a Grape Ripens?The grape varietal itself plays a major role, but Mother Nature has plenty to say about it too. Temperature, rainfall, sunlight, elevation, vineyard location, and even the weather during the previous months can affect how quickly grapes develop.
Here in North Georgia, no two growing seasons are exactly alike. A hot, dry summer may move things along quickly, while rain or cooler temperatures can change the timeline. Even different areas within the same vineyard can behave differently.
This is why there isn't one predetermined “harvest date” on the calendar.
White Grapes vs. Red GrapesIn many vineyards, white wine grapes tend to come in earlier than the big red varietals. For white wines, winemakers are often looking to preserve bright acidity and fresh fruit characteristics, so the grapes may be picked before their sugar levels climb too high.
Red grapes generally spend more time developing on the vine. During those additional weeks, we're watching more than sugar. The skins are developing deeper color, the seeds are maturing, tannins are changing, and the flavors inside the berries are evolving.
And even among red grapes, timing can vary dramatically from one varietal to another.
One block might be ready while the Cabernet Sauvignon down the hill is telling us, “Not yet.”
Harvest Is a Season, Not a DayOnce the first grapes come into the winery, things get busy quickly. Over the following weeks, different varietals arrive as they're ready. Some years the timing is nicely spread out. Other years, Mother Nature decides everything should ripen at once—and the winery gets very interesting!
That's part of what makes this time of year so exciting.
The vineyard is constantly changing, the winery is full of activity, and we're getting our first glimpse at the wines that will eventually make their way into your glass.
So when you visit Fainting Goat Vineyards during harvest season, remember: the grapes you see hanging on the vines aren't necessarily waiting for one big harvest day. Each varietal is on its own timeline—and we're patiently waiting for each one to tell us when it's ready.
